Here’s how to make the
best Belgian Banana waffles
Ingredients:

1 1/3 cups all-purpose flour

3/4 teaspoon baking soda

2 teaspoons white sugar
·
1/4 teaspoon salt

3 eggs
·
1 1/2 teaspoons vanilla extract
·
1 1/3 cups milk
·
1/3 cup melted butter
·
2 teaspoons baking powder
·
1/4 cup butter
·
2/3 cup brown sugar
·
2 teaspoons rum flavored extract
·
2 teaspoons vanilla extract
·
1/2 teaspoon ground cinnamon
·
1/4 cup whole pecans
·
1/2 cup pancake syrup (i.e. Mrs.
Butterworth's®)
·
3 bananas, cut into 1/2 inch slices
·
1 cup heavy cream
·
1/4 teaspoon vanilla extract
·
1 tablespoon confectioners' sugar
Procedure:
Prepare and preheat
your Belgium waffle iron. In a large bowl, stir together flour, baking soda, baking
powder, white sugar, and salt. Set aside.
In another bowl, beat
the eggs together with 1 1/2 teaspoons vanilla extract, and milk. Add the
melted butter and flour mixture and then stir together until batter gets moderately
lumpy.
Pour some portion of
the batter into the preheated waffle iron. Cook waffles for about 2 minutes or until
steam stops rising from the seam.
Meanwhile, set a saucepan
over medium heat and then melt 1/4 cup of butter. Gently toss in brown sugar,
rum extract, 2 teaspoons vanilla extract, and cinnamon. Allow mixture to
simmer. Toss in pecans and then continue simmering for about 1 minute.
Pour in pancake syrup
and fold in bananas, keep simmering for about 4 minutes, or until bananas become
tender. Set aside to cool sauce.
In a medium bowl,
thoroughly beat the heavy cream along with 1/4 teaspoon of vanilla and
confectioners' sugar using an electric mixer. Beat until stiff peaks form.
Once all the waffles
are completely done, pour banana sauce over each waffle and then top with a spoonful
of whip cream.
